How come there aren't any videos on youtube of somebody playing the Gibson les paul Rhoads signature?

Those guitars are usually stored in an airtight vault buried deep within the earth away from sunlight and extreme temperatures. Sad, but it's usually the case.

Ied rather just stick with my own les paul custom. Not a big fan of signature models, your just paying for the name, plus I never would feel it would be mine
