I don't think binding makes a bit of difference in the neck carve.
I've owned a few and they all had very thin necks ... and binding.
I have played a few that were neck heavy though.

Buying new gear is always a double edge sword. I swear 1/2 the time I get new gear I don't play the old stuff any more. I have 2 guitars that I have hardly touched since getting my Jacksons.
